Celebrity Banana Bread Recipes to Fuel Your Week

In spirit of world baking day, we are highlighting 3 super delish celeb banana bread recipes that are totally worth trying out. Banana bread has to be one of the best answers to a sweet tooth craving and lockdown certainly confirmed this!


Below you will find the ingredients list and instructions to dishes created by: Kourtney Kardashian, Chrissy Teigen and Jessica Alba. Take your pick or give all of them a go (cos why not). Happy baking!


1. Kourtney Kardashian's Chocolate Chip Banana Bread


Preparation time: 15 minutes

Cooking time: 75 minutes

Total time: 90 minutes

Ingredients:

Makes 2 loaves:

  • 3 x large ripe bananas

  • 300g sour cream

  • 1/2 cup x butter

  • 3 x eggs

  • 1 x tsp vanilla essence

  • 3 x cups cake flour

  • 2 x cups sugar

  • 2 x tsp baking soda

  • 2 x tsp baking powder

  • 1 x tsp cinnamon

  • Pinch of salt

  • 2 x cups chocolate chips

Instructions:

1. Preheat the oven to 180°C

2. Mix together the bananas, sour cream, butter, eggs and vanilla in a large sized bowl.

3. In a separate bowl, combine the flour, sugar, baking soda, baking powder, cinnamon and a pinch of salt.

4. Slowly add the dry ingredients to the bowl of wet ingredients.

5. Mix the chocolate chips with the combined ingredients.

6. Pour the batter into two lined or greased bread loaf tins.

7. Garnish with a little sprinkle of cinnamon (optional)

8. Leave in the oven for +- 75 minutes. Be sure to start monitoring the banana bread after 1 hour. Bread is ready when a toothpick comes back out clean and the loaf looks golden brown and firm.

2. Chrissy Teigen's Banana Bundt Bread


Preparation time: 15 minutes

Cooking time: 60 minutes

Total time: 75 minutes

Ingredients:

  • 2 x cups mashed brown bananas

  • 4 x eggs

  • 2/3 x cups canola oil

  • 2 x cups cake flour

  • 2 x cups sugar

  • 1 x sachet vanilla instant pudding

  • 1 x tsp baking soda

  • 1 x tsp salt

  • 1 x cup shredded coconut

  • 2 1/2 cups dark chocolate chips

Instructions:

  1. Combine the mashed bananas, eggs and canola oil in a large sized bowl.

  2. In a separate mixing bowl, mix together the flour, sugar, pudding mix, baking soda and salt.

  3. Add the wet and dry ingredients together and stir until combined.

  4. Fold in the coconut and chocolate chips and ensure that they are evenly mixed.

  5. Pour the mixture into a greased bundt tin or opt for 2 separate bread loaf tins.

  6. Place it into a preheated oven at 160°C for +- 60 minutes.

  7. Remove from oven once golden brown.

3. Jessica Alba's Gluten Free Apple Banana Bread Pudding


Preparation time: 30 minutes

Cooking time: 90 minutes

Total time: 120 minutes

Ingredients:

  • 6 x cups gluten free sandwich bread

  • 2 x sliced apples

  • 2 x thinly sliced bananas

  • 1/4 cup gluten free chocolate chips

  • 3 1/2 x cups coconut milk

  • 1/3 x cup brown sugar

  • 2 x tsp cinnamon

  • 6 x eggs


Instructions:

  1. Fully grease a glass (oven safe) dish - approximately 22cm x 28cm in size.

  2. Slice the bread into cubes and scatter evenly across the bottom of the dish.

  3. Sprinkle the chopped banana and apple in a single layer on top of the bread.

  4. Distribute half of the chocolate chips and brown sugar over the fruit.

  5. Scatter the remaining bread and chocolate chips over the mixture.

  6. In a large bowl, whisk together the eggs and milk until nicely combined.

  7. Gently pour the liquid mixture over the bread dish and set aside for 20 minutes while regularly pushing down the bread to soak up most of the moisture.

  8. While the bread is soaking, preheat the oven to 160°C.

  9. Sprinkle the remaining sugar over the top of the dish (add cinnamon as an optional extra).

  10. Place the pudding dish in a larger pan.

  11. Pour hot water into the larger pan until it reaches the halfway point of the pudding dish.

  12. Bake for 1,5 hours - pudding should have a soft centre and crispy top.

  13. Remove from the oven and let it cool for 15 minutes before serving.
